
Ingredients
- 4 medium tomatoes, diced
- 1 medium onion, diced
- 2 garlic
- 1/2 of a red capsicum, diced
- 1/4 cup celery, chopped
- 2 tsp chopped basil
- 1 tsp butter
- 1 tsp all purpose flour
- 2 tsp olive oil
- Salt and pepper powder to taste
- 2 tbsp Cream (optional)
Method
- Heat oil in a pan add garlic ,onions, celery, capsicum and saute until soft but not browned.
- Add tomatoes and cook till mashed with little water. Add salt, basil and pepper powder.
- Let it cool briefly and make a fine puree in a blender and strain.
- Add butter in the pan add 1 tsp of flour and cook in very slow flame till it is slightly brown, add strained puree and let it come to a rolling boil.Check seasoning ,add cream if you desire.
