Fresh Tomato Salsa

Ingredients

  • 5 tomatoes
  • 1/2 cup chopped coriander/cilantro
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp chopped jalapenos
  • 1 green chilli, chopped
  • 1 tbsp olive oil
  • juice of 1 lemon
  • 1 tsp salt

Method

  1. Rough chop the tomatoes, onions, and garlic. Put all the ingredients into a food processor or blender, and and turn on at the lowest speed for 10-15 seconds. Check the consistency. If needed, repeat one more time. Be careful not to puree it. You want the salsa to be a little chunky.
  2. Keep in the refrigerator for 15-20 minutes if you have the time. It helps the flavors mix.
