- 2 tbsp Honey
- 4 tbsp Fresh Orange Juice
- 4 tbsp Olive Oil
- Salt and Pepper
- 450g Watermelon Flesh, deseeded and cubed
- 100g Feta Cheese, cut into small cubes
- A large handful of Watercress
- Place the ingredients in a large mixing bowl and whisk together until well blended.
- Add the watermelon, feta cheese and watercress and toss gently to coat well.
