Ingredients
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp chopped basil leaves (2 tsp dried basil)
- 1 tsp dried oregano
- 2 tsp pepper powder
- 2 clove garlic, minced
- 4 boneless, skinless chicken breast halves
- Salt to taste
Method
- Place chicken in shallow dish.
- Combine the remaining ingredients and pour over both sides of chicken.
- Cover and refrigerate overnight.Make sure each side of the chicken breast is covered in marinade
- Grill or broil about 10 minutes each side or until done. Pour tomato and coriander sauce over the chicken and serve with boiled vegetables.
Tomato and coriander sauce
Ingredients
- 1 clove garlic, finely chopped
- 1 tablespoon olive oil
- 1/2 cup fresh tomato puree
- 1/4 cup finely chopped coriander leaves
- 1/4 tsp kashmiri chilli powder
- Salt to taste
Method
- Heat a small saucepan over a low heat.
- Add the oil,add garlic.Saute for 1 minute.
- Add the tomato puree and kashmiri chilli powder and cook for 2 minutes.
- Turn off heat and stir in coriander leaves.
- Add salt to taste.
