Zucchini

• Zucchini, which is also known as courgette, belongs to the marrow and squash family.
• It is elongated in shape – resembling a cucumber and there are both green and yellow varities.
• Although zucchini is commonly referred to as a vegetable, it is in fact a fruit.
• As well as being the main ingredient in the popular zucchini bread recipe, zucchini or courgette is an excellent vegetable that is low in calories (approximately 15 calories per 100 g fresh zucchini), yet rich in nutrients, including folate, potassium and vitamin A.
